Meet the chef responsible for making Petra’s Bistro & Wine Bar one of the most-loved restaurants in Mammoth Lakes......
Starting at age 14, Radisson Williams forged his way through the ranks of the restaurant industry from a dishwasher and at age 17 became part owner of Pelly’s fish market in Carlsbad, California. Over the next 30 years chef “Rad” developed and refined a Mexican influenced fish cuisine as well as relationships with some of the finest fish purveyors in the Western US. He then took his skills to work at Restaurant Skadi under chef Ian Algeroen where he refined his culinary skills in fine dining.
Eventually finding his way to Mammoth Lakes and Petra’s Bistro, he built a motivated and passionate team and embraced a new cooking philosophy in the restaurant industry. This is a more “democratic” approach to cooking where the entire restaurant staff is encouraged to put forth their own creative ideas and from there, through collaboration, refine the concept to create a final dish. This philosophy as well as chef “Rad’s” concept of supporting local Mammoth Lakes ranchers and farmers whenever possible and his commitment to use only naturally raised and sustainable meats and seafood has led to many new and exciting tastes as well as a more empowered and driven team that takes great pride in making Petra’s one of the best places to eat in Mammoth.

Our wine list is composed of food friendly wines at all price points from all pertinent wine regions throughout the world.
Our list has 28 wines by the glass from throughout the globe, with 250 bottled selections ranging from $30 to $600 with the majority of the list under $70.
Quality liquor, fresh juices, artisanal ingredients and handcrafting is what makes our cocktail list so unique. We take advantage of what’s seasonal and present to you a thoughtful list of both classics and originals.
Our specials are seasonal, it may be a wine, a cocktail or a menu item. Servers will describe our current offerings. We are excited to pour our very own “Petra’s Blend" called Petrossa. This is an Italian varietal-based wine that we collaborated with Clesi Wines to create. Petrossa is currently available by the glass or bottle!
Happy Hour until 6:30 pm, served at the bar only. Offering special prices on wines by the glass, cocktails and bottled beers as well as special menu items to compliment our drinks.
